Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 8 oz mascarpone cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup strawberry jam
  • 1 tbsp lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. Mix flour and granulated sugar in a bowl. Cut in butter until crumbly.
  3. Press 2/3 of the mixture into the pan to form the crust. Bake for 15 minutes until golden.
  4. Beat mascarpone, powdered sugar, and vanilla until smooth. Spread over baked crust.
  5. Swirl strawberry jam with lemon juice. Spoon over mascarpone layer and swirl with a knife.
  6. Crumble remaining flour mixture on top. Bake for 25-30 minutes until set.
  7. Cool completely before cutting into bars. Chill for cleaner slices.
