- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, cold and cubed
- 8 oz mascarpone cheese, softened
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup strawberry jam
- 1 tbsp lemon juice
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- Mix flour and granulated sugar in a bowl. Cut in butter until crumbly.
- Press 2/3 of the mixture into the pan to form the crust. Bake for 15 minutes until golden.
- Beat mascarpone, powdered sugar, and vanilla until smooth. Spread over baked crust.
- Swirl strawberry jam with lemon juice. Spoon over mascarpone layer and swirl with a knife.
- Crumble remaining flour mixture on top. Bake for 25-30 minutes until set.
- Cool completely before cutting into bars. Chill for cleaner slices.
