- 2 medium courgettes (zucchini)
- 200g ricotta
- 1 garlic clove
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Fresh basil
- Salt and pepper
Instructions
- Dice courgettes and sauté with garlic in olive oil.
- Blend cooked courgettes with ricotta and lemon juice.
- Season with salt and pepper.
- Garnish with fresh basil and serve.
Notes
Drain ricotta if watery. Serve warm or chilled. Pairs well with bread or as a side.
