Ingredients

  • 2 medium courgettes (zucchini)
  • 200g ricotta
  • 1 garlic clove
  • 2 tbsp olive oil
  • 1 tbsp lemon juice

Instructions

  1. Dice courgettes and sauté with garlic in olive oil.
  2. Blend cooked courgettes with ricotta and lemon juice.
  3. Season with salt and pepper.
  4. Garnish with fresh basil and serve.

Notes

Drain ricotta if watery. Serve warm or chilled. Pairs well with bread or as a side.
