A light yet satisfying Mediterranean-inspired bowl featuring fluffy semolina, crisp seasonal vegetables, protein-packed chickpeas, and zesty lemon-cumin dressing.

Ingredients

Scale
  • 200g durum wheat semolina
  • 400ml boiling water
  • 1 zucchini, diced
  • 1 red bell pepper, diced
  • 1 carrot, grated
  • 50g cooked chickpeas
  • 2 tbsp olive oil
  • 1 lemon (juice and zest)
  • 1 tsp cumin
  • Salt and pepper to taste
  • Fresh mint for garnish

Instructions

  1. Hydrate semolina with boiling water and let rest 5 minutes
  2. Sauté vegetables in olive oil for 5 minutes
  3. Fluff semolina with a fork
  4. Combine all ingredients including spices and lemon
  5. Garnish with fresh mint and serve

Notes

Don't overcook vegetables – they should retain some crunch. Use best quality olive oil.
