Ingredients
Scale
- 200g durum wheat semolina
- 400ml boiling water
- 1 zucchini, diced
- 1 red bell pepper, diced
- 1 carrot, grated
- 50g cooked chickpeas
- 2 tbsp olive oil
- 1 lemon (juice and zest)
- 1 tsp cumin
- Salt and pepper to taste
- Fresh mint for garnish
Instructions
- Hydrate semolina with boiling water and let rest 5 minutes
- Sauté vegetables in olive oil for 5 minutes
- Fluff semolina with a fork
- Combine all ingredients including spices and lemon
- Garnish with fresh mint and serve
Notes
Don't overcook vegetables – they should retain some crunch. Use best quality olive oil.
